If you've read the books, they say in the beginning of the series that vampires that havn't eaten (or had blood) lately, their eyes turn crimson. All newborn vampires start out like this. Before Bella opens her eyes, the story implies Bella has died. But at the last second, she opens them and they're red. This shows she has been turned into a vampire which opens up for Breaking Dawn Part 2.
Edward's eyes turning red in "New Moon" is meant to symbolize his thirst for blood after resisting the temptation for so long. It signals that he is struggling to control his vampire instincts in the presence of Bella, who has a particularly appealing scent to him. This visual cue highlights the internal conflict Edward faces throughout the story.
She's a new born vampire. Therefore, She has never had animal blood, only her human blood from transforming.

Esme is Edwards mother for all intensive purposes. (:
yeah, he shows her around too.
I would've thought it was because Jacob is a werewolf, i dont know its just a suggestion, you know like werewolfs are supposed to turn on new moons "New Moon" is actually called this because in "Twilight" Bella describes Edward as her "own personal moon" However, in New Moon Edward leaves and Bella strieks up a relationship (of sorts) with Jacob. She then goes on to describe Jacob as "Her personal sun" Hence "New Moon" Jacob is taking Edwards place.
he gives her a CD full of songs he played on the piano.
