Elie may have lied about his age and occupation to qualify for a job or opportunity that he wouldn't have been eligible for otherwise. He may have felt pressured to lie in order to secure employment, advance his career, or meet certain criteria for a specific position. It's possible that he believed the benefits of lying outweighed the risks at the time.

Elie lies to his family to give them a sense of hope and even if temporary, sense of happiness. Knowing ones family is alive gave many camp prisoners the desire to live and to carry on their day to day life amidst the Horror that was going on around them. Elie just wanted to ease the man's thoughts and make him feel better for a while.

He lied to Stein because he couldn't face telling him the truth - that his family were no longer alive. He didn't want Stein to know the truth (unfortunately he finds out).
