the only Pokemon in any game that changes color when something happens, is Arceus. It changes color when you give it a plate of differrent kinds. For example: if you give an Arceus a toxic plate, it will turn purple and become a poison type. If you give an Arceus a splash plate, it will turn blue, and become a water type, etc.
