Its all about energy levels. Individually, the acid and base have higher energy levels separate than when they are combined. When an acid and base react together, they form a salt and water. It is a more stable system with a salt and water than an acid and base.

Second, acids want to give off their Hydrogen ion, and the base wants to give up its hydroxide ion. The hydrogen ion and hydroxide ion combine to form water, and the chemicals left over combine together to form a salt.

ex: NaOH + HCl ===> NaCl + H2O
