After emerging from the cell as a fully formed insect, the queen bee only really gets bigger during the period immediately after mating when she is well-fed by her workers ready for egg laying.

Insects are constrained by the construction of their body to grow mainly whilst in the flexible form of a larva or grub. As adults they have no scope to stretch their skin to accommodate more body mass as a human does.

The queen bee isn't exactly "in charge", she's just the single point of failure for the colony, so the other bees protect her. With no queen, there are no new eggs, which means the colony will eventually die off unless a new queen is produced. (Bees can produce a new queen by feeding a larva with a substance called royal jelly, which causes the larva to develop into a fertile queen rather than a sterile worker.)
