Best Answer

Baking powder is used to puff up the pastry. It contains baking soda along with an acid to activate it - too much and the result will taste like soda...too little and the result will be flat or heavy.

Why does your zucchini muffin recipe call for baking soda and no baking powder?

Baking soda will cause things to rise also. Muffins are smaller so there is not as much need for lift. Baking powder will give more rise than soda. Whoever created the recipe chose to use soda instead of baking powder.

When a recipe call for 2 teaspoon of baking soda how much Cream of Tatar should you use?

Baking powder is a mixture of baking soda, starch and an acid (often tartar) to activate the baking soda. Since baking soda is already in the baking powder, it is possible you will not need any additional baking soda. Baking powder and baking soda are used to "raise" or puff up the pastry - too little and it will not raise properly...too much and it will taste like soda. If you do not have a specific recipe, you will need to experiment.

What can you use instead baking soda?

Using Baking Powder Instead of Baking Soda* You need to use 2-3 times more baking powder than baking soda. The extra ingredients in the baking powder will have an effect on the taste of whatever you are making, but this isn't necessarily bad. * Ideally, triple the amount of baking soda to equal the amount of baking powder. So, if the recipe called for 1 tsp baking soda, you would use 3 tsp baking powder. * What I do is compromise... I use twice the amount of baking powder as baking soda (add 2 tsp of baking powder if the recipe calls for 1 tdp baking soda), plus I omit the salt (which adds flavor but also affects rising in some recipes).

You don't have any baking soda and you need it for banana muffins?

If you are using self rising flour, you do not need baking powder, soda or salt. You can safely omit these ingredients from the recipe.

Can you mix baking powder and baking soda?

There is no need to. Baking powder has baking soda in it already. Baking powder is a mixture of cream of tartar and baking soda. Adding extra soda to it might make the bake good you are preparing come out with "unexpected" results. If a recipe actually calls for it, fine, but I have never seen one that calls for both. If you don't have enough of one or the other for you recipe, you can mix them but if you're low on soda, the baked good may not rise as much. It's best to follow the amounts in the recipe since each one responds a little differently depending on the acid content of the batter.

Well if your recipe calls for 1 teaspoon of baking soda, you would need four teaspoons of baking powder to produce the same amount of lift.

Why does a recipe need so much baking powder?

A heavy recipe or wet. Whole wheat flour takes more. Most use 1 teaspoon for 1 cup flour. This varies some but it should be in that range.

Can you use self rising flour instead of bread flour for bread?

If a recipe calls for self-rising flour, your recipe will not turn out if you replace it with unbleached flour only because unbleached flour does not rise. You would also need to add baking powder to the recipe (about three teaspoons per cup of flour) if you were making this substitution in order for your recipe to rise.

Why do you have to comply with recipe instructions?

You do not at all times need to comply with recipe instructions. However, with some ingredients, there is a given amount because these ingredients are essential to a process during baking or cooking. Some such ingredients are yeast, flour, baking powder, baking soda, and salt.
