The protein in an egg is converted during the application of heat.

If you are asking why an egg cooked to be soft continues on to harden, this is because of what is called "continuation" cooking. When food is removed from the cooking vessel, there is still enough heat to continue the cooking process. One of the things a chef learns early is how soon to remove food that is not completely cooked to allow the continuation cooking to finish the food as it is presented to the customer.
