In all probability you either have a bad radiator cap or an air lock.

Depending on the engine, the coolant temperature in a Cadillac could be from 180 to 195 degrees. The thermostat can be changed to give a lower or higher temp reading.

You may have a faulty coolant level sensor
this sounds like a bad thing to me...like the reservoir and/or the cooling system, has no antifreeze in it and heat from the engine is exiting through the cooling system. Does your temperature gauge read in the normal range? Is the car running OK? FriPilot

The fan only runs when needed to help cool the engine. The engine coolant sensor or a separate engine temperature switch is used to monitor engine temperature. Extra cooling is not needed when an engine is first started, so the fan does not come on until that engine reaches normal operating temperature which is usually from 195 to 215Â°F. The fan will then cycle on and off as needed to maintain the coolant temperature. So the fan runs mostly at idle or low-speed when the engine is at normal picture.
If your engine coolant temperature gauge is indicating that it is running much cooler than normal ( it sounds like the engine cooling thermostat is sticking open / not closing completely ) which means you need to have the thermostat changed. You should consider if have good heat from your heater and if your check engine light comes on.

The assumption is that you are asking about coolant temperature of an internal combustion engine. Normal temperature is determined by the thermostat. Thermostats are usually somewhere around 185 to 195 degrees F. With a high pressure cap, the coolant shouldn't go much above 225 to 235.
there is a level sensor in the coolant canister located on the inner fender on the pasanger side under the hood. the radiator overflow line goes to this canister. this has happened to me several times on my 2001 Z-71. all i do is add anti freeze to the hot level, after the engine is at normal operating temperature.
