In all probability you either have a bad radiator cap or an air lock.
The engine needs to be flushed.the coolant ports have a build up of gunk causing the engine to run hotter. The heated water expands to much causing it to over flow from the reserve tank.
After coolant is added run vehicle to normal operating temperature and re-check coolant level

this sounds like a bad thing to me...like the reservoir and/or the cooling system, has no antifreeze in it and heat from the engine is exiting through the cooling system. Does your temperature gauge read in the normal range? Is the car running OK? FriPilot
You may have a faulty coolant level sensor
Depending on the engine, the coolant temperature in a Cadillac could be from 180 to 195 degrees. The thermostat can be changed to give a lower or higher temp reading.

I am an ASE certified technician. Your normal engine or coolant temp should be 190 - 210.
The fan only runs when needed to help cool the engine. The engine coolant sensor or a separate engine temperature switch is used to monitor engine temperature. Extra cooling is not needed when an engine is first started, so the fan does not come on until that engine reaches normal operating temperature which is usually from 195 to 215°F. The fan will then cycle on and off as needed to maintain the coolant temperature. So the fan runs mostly at idle or low-speed when the engine is at normal picture.
