Water with salt will actually take longer than water without salt to evaporate. This is due to boiling point elevation. If you put a solute into water, it will make it more difficult to boil, and therefore will boil at a higher temperature. Since it takes longer for the salt water to boil, it will take longer for it to evaporate as well

It depends on how much food coloring you are trying to absorb, and how big the celery is. If you have a small stick of celery and a lot of food coloring, it will most likely take about a week or so for the celery to completely absorb the food coloring. When the color of the water and the color of the celery switch places, it is fully absorbed. I will be doing this experiment myself to see how long in days, minutes, and seconds it takes, but if you have any more questions, try it!
I dont now why dont you try it. Take the frozen food coloring in the cup or an ice cube container then next to the ice cube of the frozen food coloring and put the regular ice cube next to it.Once frozen take it out and watch them melt!
