Because, by the process of photosynthesis plants produce oxygen which is most essential for humans, AND the plants provide food for their own survival and growth, and thus provide a food source for humans and many vegetation eating animals which are another food source for human life.

Plants perform photosynthesis. They are able to take sunlight and make their own food out of it. Other organisms depend on photosynthesis indirectly through the food chain. Herbivores eat plants; carnivores eat herbivores; carnivores die and their decaying carcasses are picked apart by worms; worms help aerate the soil, which feeds plants.

They use a process called cellular respiration to break the glucose down into energy that the plant can use. Animals require the food and oxygen produced by photosynthesis for cellular respiration themselves. Plants, on the other hand, need animals' carbon dioxide in order to photosynthesize. Therefore, all life on Earth depends on photosynthesis.
