Plants need water transportation of prepared food to different parts of the body. If there is lack of water, the food which is in the solution form will not be recieved by different parts and there will not be enough enrgy produced inside the body for diffrent activities and naturally the plant will die..
In the soil there are small air pockets that collect oxygen, and hold it there. Plant roots, although they need water, they also need oxygen, and get it out of the small air pockets in the soil. If you water a plant too often, those air pockets will pop, and there for suffocating the plant.
