roots in plants grow as they need to be able to support the plant upright and keep it in the ground in bad weather conditions eg wind , the roots also grow so they can get to more nutrients to feed on .

Its because soil gives nutrients to the plant, when germination begins the seed is dried so the soil gives water to the seed.
