The sodium content of the chips will raise your bodies plasma sodium concentration causing an increase in the osmolality of the blood which is a signal for ADH(Antidiuretic hormone) to be released from the posterior pituitary gland. ADH causes the kidneys to retain water in response to the increased osmolality which the body percieves as a diminished fluid volume, it also stimulates thirst centers in the hypothalamus making you thirsty. Later you will pee all that water out due tothe actions of ANP(Atrial natriuretic peptide) being released from the right atrium of the heart as a response to increased stretching due to increased venous return.

it doesn't cause dehydration in fact im am pretty sure it doesn't do anyhting to your body but it also causes you to feel more hungry than you actually are because your body thinks that your actually eating somehting so it releases spesific enzymes for your mouth to break the food down in to smaller bits, saliva is the enzyme inside the mouth released to break the food down. sciencefreak
