What The Bible mean by that is a death of the old sinful flesh and born again. Jesus dying on the cross ( our sinful flesh died) and he resurrected in 3 days ( He giving us a new life)

Because we sin.
According to the Bible "...the wages of sin is death..."(Romans 6:23 NIV)
Again, "The soul who sins shall die"(Ezekiel 18:4 ESV)
"...just as sin entered the world through one man, and death through sin, and in this way death came to all people, because all sinned..."(Romans 5:12 KJV)
Because of the foregoing scriptures, many feel that we die because we sin, through no fault of our own.
Sinning is 'falling short of perfection'. We sin by nature now, because of 'one man', our original FATHER, Adam, who listened to Satan and chose to rebel against God, then filled the earth with imperfect (sinful) children(Psalm 51:5/Romans 3:23 ).
God sent Jesus, a perfect man(1 Peter 2:22/Hebrews 4:15), a new 'FATHER', to provide a 'corresponding ransom' for the sin of Adam(Matthew 20:28/1 John 2:1+2/Romans 5:18+19+21) buying back those who exercise faith in him,(1 Corinthians 15:45), and again giving us the opportunity for everlasting life. (John 17:3 / John 3:16 /Romans 7:14-25)
