IT may be low on refrigerent. or a problem with the system. It will disadle it's self to prevent damage.
Models with a D in there name are diesel. At least in the USA. The 560SEL is not.
I'm Guessing that your talking about the A/C compressor, in which there are 1 or 2 wires going to the clutch. Disconnecting this wire(or 2) will disable the compressor clutch stopping the compressor from working.

Now days it is not feesable to replace just the clutch on the a/c. Just as cheap to buy a compressor and vaccum and have it serviced right. Older methods are just gone due to the crappy economy and cheaper parts..

Jack up the car. Unscrew two bolts in the rear bearing arms, then unscrew the top bolts. You will need to take out the back of the rear seat in order to get to these. Then the shocks can be taken out and new installed.
