Because it outgrows the shell it is currently in and much ditch it and move on to another shell which it will eventually outgrow again. Much like how you do not wear what you wore when you were a child!

some crabs are picky, but most hermit crabs must find a new shell as they grow and need a larger one. During these growth spurts, they may even kill another crab for their shell.
