We just call it that. The opposite of Full is Empty, but calling the unilluminated Moon "Empty" would not be correct.
Comment: The reason there has to be a "New Moon" phase is that the Moon's orbit puts the Moon between the Earth and the Sun (more or less) about once per month. We can't see any light from the Moon then and it's called the "New Moon".
