For something to evaporate, it must get warmer by absorbing some energy. Since energy cannot be created from nothing, it must come from somewhere; the environment surrounding the material. So as the material gets warmer and evaporates, the surrounding area gets colder. For example, sweat: as the liquid evaporates from the skin it absorbs energy from the body to do so, effectively cooling it down.
