When a boat is floating on water it displaces water equal to its weight(Archimedes Principle). As the density of water is less than boat so water displaced is greater than volume of boat. When the boat sinks water displaced is equal to volume of boat. So less water is displaced in 2nd case and consequently water level goes down.

A rock sinks because it is pushed down by a force of gravity and it is often denser than the water itself so the buoyancy pushing up on the rock is not strong enough to hold the rock on top of the water so therefore the rock will sink.

the level with relative to the shore will decrease. This is because when the rock is on the boat, the weight of the rock is added to that of the boat and the volume of the boat displaces the water, causing it to sink in and thus raising the level of water. Once the rock is thrown out, the boat gets lighter and hence exerts a less pressure. Also as the volume of the rock is less than the boat, the pressure exerted by rock and boat seperately is less than exerted by them together...hence the level decreases...
This actually happened with Titanic. The only way the boat can sink is if the boat has a giant hole in it. A boat floats on water, but what happens is the water from the ocean or lake or whatever goes into the boat. As the water fills up the boat, the boat justs get very heavy. and it goes down deep in the water.Example: The titanic hit an iceberg and it made huge holes on the side of the boat. So water went in the basement and It the water went up to every floor and boat got so heavy.
