well since we as animals are basically made up of water, it takes an abnormally high boiling point because then our bodily organs wouldn't be in a stable temperature environment and we would all die of over heating or freezing.

Because water is a polar molecule of exceedingly many and continually reforming hydrogen bonds. This give water a high specific heat because it takes much energy to over come those hydrogen bonds and get water to boil, let alone melt.
