Most common cause is a drive (serpentine) belt for alternator, water pump etc slipping a little. Check tensioner, replace belt if glazed. A HVAC supplier should be able to sell you an anti-slip spray on aerosol can, if you're into crude fixes.

Yes. First top up the radiator then fill the overflow reservoir to the "HOT" mark if the engine is hot or the "COLD" mark if the engine is cold. Be CAREFUL when you remove the radiator cap on a hot engine. The coolant is under pressure.....
With the engine cold, remove the cap on the power steering pump. Inside the cap is a dipstick with a marking for both the cold and hot fluid levels

Could be lots of things. You should have it checked for codes. The temp gauge problem would make me think of a possible temp sensor problem. It should be located near the thermostat housing.
