Most likely because you are low on coolant. Check your manual for more specific answers.

Check the coolant level in the radiator (not the fill bottle) You may have air in the radiator and the air pocket may be causing the light to flash. You would need to bleed the air out. You may have a bad sensor and needs to be replaced. It is located on the passenger side of the radiator below the fill neck (and has a wire going to it)
