my fish also does that. Is your fish a male or female? If it is a female it is probably pregnant. Hope that helps!
In my experience if allowed to sit still they will separate, gasoline to the top.
I actually don't own goldfish, i own freshwater fish, like you but they're warm water, not cold, like a goldfishes. but i think you only have to wait about 30min (see next paragraph), that's what it is for my fish. before you put them in the tank, let there bag (the one you take them home in) sit in your tank for those 30min. just incase, though, you may want to ask your local pet store for more on goldfish.
Goldfish are relatively easy to care for. The most important thing with them is to buy them clean pure water or let their water sit out for at day prior to adding it to the bowl. Purchasing vitamins for gold fish and adding filters and a heater to the tank will help.

Some ways you can tell that your goldfish is sick are that it might start swimming slowly, upside down, sideways and around in circles. Its colour might get patchy or blotchy and its eyes might look cloudy and close a little bit. It might also go to a corner of the tank and just sit there for long periods of time.
If it is the common type with a float (big empty bulb) on the end of a rod, rotate the rod or bend it to make the float sit igher. The water will have to come higher in the tank to raise the rod high enough to shut of the water.
Goldfish are decently easy to care for. You just have to definitely remember that they do not need to eat as much as any other animal due to their small stomachs and that they will keep eating the food even after they're full and it can kill them! Also to make sure to increase your goldfish's lifespan get a bubbler system in your tank so they can breathe better, distilled water is harder to breathe in! Also, if you're too busy to clean their tank every other day the best investment would be a sucker fish that eats all the mildew that collects in the tank. Lastly, when you get your new pet, set up his tank and let the bag he comes in sit in the water for a half hour so the water temperatures in the bag and the tank both agree with the poor little swimmer. Nothing hurts more than going from two different temperatures!
