Hair is composed alpha keratin. Many of the amino residues in keratin are cysteine, which makes disulfide bonds between polypeptide chains. The disulfide bonds gives rigidity and structure to the hair. Fingernails, feathers, hooves and even tortoise shells are composed of the same protein, they just contain many more disulfide bonds. It is the sulfur which gives burnt hair a very bad smell.
