Because they cant find him
Huck Finn rows out in a canoe to a boat that has two slave hunters. When Huck Finn is approached by the slave hunters, he says that his father, mother, and sister, Mary Ann, all have small pox. However, this is just a tall tale that Huck makes up, because he doesn't want the slave hunters to go near the raft which Jim is on. Therefore, the slave hunters are afraid to go near the raft and don't capture Jim.
Huck tells them his dad is on the boat and has smallpox, so they should stay away. He props up his father's body in the cabin with his face covered and nailing a notice to the cabin door warning it was contagious. This convinces the slave hunters to keep their distance, allowing Huck and Jim to escape.
The slave hunters don't get Jim because he escapes with Huck on a raft down the Mississippi River. Jim is able to avoid capture by using his resourcefulness and quick thinking to stay one step ahead of those trying to capture him.
