Plant membranes are adapted for the environment the plants evolved to thrive in. Since bananas are tropical fruit, their membranes are stable and effective at higher temperatures. Putting it in the refrigerator causes the membranes to become less flexible. Some membranes in the cell separate oxidative compounds from the rest of the cell. When the membranes fail these compounds cause browning.
