Anyone who is not Jewish is a gentile. This just a way of making distinctions among groups. In general gentiles do not celebrate Jewish holidays.

Gentiles will not routinely celebrate Passover, Purim, Rosh Hashanah, Hanukah and many others.

If a gentile does not celebrate Easter, it must be because he/she does not believe in Easter. Likely they are not Christian or belong to a Christian sect that does not celebrate Easter. All Christians are gentiles, and most Christians celebrate Easter.

Most gentiles (or Christians) do not want to celebrate Jewish holidays, because as they see it, Christian holidays are more important to their faith; in fact, many Christian denominations believe that the Jewish religion was either replaced or superseded by Christianity, so it is no longer necessary to observe Jewish holy days. Also, the majority of gentiles have no emotional or familial ties to Jewish holidays, so they don't know how to observe them.

But it should be noted that not all Christians believe Judaism was replaced, and in fact, there are some Christians who are very interested in what Jews believe, since Judaism is the religion Christianity came from. In some churches, there is now a renewed interest in learning about Jewish holidays, because those are what Jesus (who was Jewish) celebrated. Some Christians observe a version of Passover, or they ask to be invited to a Passover seder with their Jewish friends. Most Christians do not agree with Jewish theology, but they do want to understand the Jewish holidays, and in some cases, they enjoy sharing certain observances.
