There was selective pressure on the ability to outrun, versus outfly, predators. Ostriches cannot fly, but they can run very fast, up to 60 mph in a sprint. Also, their legs are very powerful and they have razor-sharp talons on the end of their toes that they can use to eviscerate an attacking predator.

Is there a possibility of all animals to hibernate?

No. With the exception of the grizzly bear, hibernation requires a slowing of the metabolism to the point that very little energy is burned and very little waste is produced but life can continue. Grizzly bears evolved unique methods to deal with this without slowing the metabolism as much. The ability of both is considered an evolutionary process that evolved over a very long period of time.
