A good guess, but not quite accurate. The actor who portrayed Mace Windu (Samuel L. Jackson) demanded that his Light saber be purple if George Lucas wanted him in the movie. George originally only wanted blue and green light sabers as a show of unity and theme, but he acquiesced to Mr. Jacksons request in the end.
If you are looking for a Canon (or In-story) excuse, then its because the Jedi Order only had access to so many Lightsaber Crystal Caves (my name for the caves where jedi find the crystals that are the heart of their lightsaber) at that point. The crystals in the lightsabers are what give them each their own unique colour. At that time the Jedi Order only had access to green and blue crystals (in general). Other colours were less common.
Lightsaber colours are determined by the focus crystal used during their construction. Mace Windu's focusing crystal is simply a different kind used than in the commoner blue, green, and even red lightsabers.
Outside the context of the movies, his character has a purple lightsaber simply because Samuel Jackson asked for one.

According to the bonus material on the complete saga Blu-Ray box set, the only reason why Mace Windu got a purple lightsaber was because when George told Samuel the "regular" lightsaber colors, Samuel asked, "No purple?" and George decided to grant him "his wish."
Green when he was a Jedi. Yes, but before he completed his training he had his father's (Anakin Skywalker also known as Darth Vader's) blue lightsaber. If his father hadn't cut off Luke Skywalker's hand, he would probably still have the blue lightsaber. And Darth Vader lost a valuable memoir by losing the blue lightsaber. After Luke lost his hand, he had to get a new lightsaber, which was green and that was the color he preferred than blue. And in my opinion his new green lightsaber is better. Luke later retrieved Anakin's saber and gave it to his wife Mara Jade.

No, they don't. Once you flip a switch it is on. Some Jedi (or anyone who can use the force) build their lightsaber with the switch on the inside of the lightsaber so no one can use their own weapon on them without opening themselves in the force.
Yoda's lightsaber is technically called a "shoto," which is a short lightsaber. Only a handful of Jedi, including Anakin Skywalker's Padawan Ahsoka Tano, use a shoto along with their original lightsaber, which is not an easy thing to do.

PS. i did not make these people up they are part of the main series of books that take place after Return of the Jedi and they are canon.
Each lightsaber contains a crystal, unique to the jedi/sith that wields it. To complete their jedi training, a jedi must find the crystal to complete the construction of their own lightsaber. In the early days of the galaxy, the Sith had both purple and red lightsabers, while the jedi have yellow, blue, and green. Later on, the Sith abandoned (for the most part) purple lightsabers, and jedis that are on the light-side of the force, but can also wield dark-side powers for good purposes, wield a purple lightsaber. Mace Windu, for example, uses a purple lightsaber because he can also use the dark side; his lightsaber form requires him to use it.
Well, really, it's just because Samuel L. Jackson asked for a purple lightsaber because it's his favorite color. That could be true, but I read something that Samuel L. Jackson just asked for a different color lightsaber just so he could stand out. But it never said about him asking for a purple lightsaber just because it is his favorite color. Eh. You could argue either side, I guess.. But I've only heard about him wanting to stand out once, and I've heard it was his favorite color quite a few times. In every movie he starred in he asked for some prop of his to be purple. Probably because he wanted to stand out and because it was his favorite color.
