You're trying to print an image that has detail at all tones--the whitest whites have detail, the blackest blacks do and all the grays do as well. If you expose the print too much, the blacks will start to close up and you'll lose detail--also the whites will start to turn gray. When you make your test, you want to choose the least exposure that will give you a solid black on the film edge.
