Because Canada is in North America. The same 24 time zones extend from the North to South Poles. If you are directly north or south of another place, you will be in the same time zone although it may not be the same time on the clock because someplaces observe daylight savings time at different times of the year.
The phrase "Spring ahead, Fall back" is to remind us which way to reset our clocks for Daylight Saving Time. In the spring, we change the clocks by moving them ahead one hour or skipping an hour (for instance, at midnight it becomes 1:00 a.m.). In the fall, we gain an extra hour by setting the clocks back or "repeating" an hour (so at midnight it becomes 11 p.m.). The reason for DST is to have more of the hours of daylight available when people are best able to utilize them, i.e., when you're awake and working (supposedly ;) rather than keeping you up later at night because the daylight lingers into the traditional "sleeping hours."
The decision to use or not use, and when to use, Daylight Saving Time is a geopolitical one, and not everybody uses it, or uses it at the same time. It is also controversial. For instance, Indiana in the USA is geographically in Central Time, but for years sat on Eastern Time, but without the shift to Daylight Saving Time. Recently, they changed to Eastern Time, with the shift, but they should still be in Central Time. It seems to be an issue with wanting to stay on New York City time, but that is not certain.
