There are two possible reasons:

1. It's probably due to people being lazy. People probably used to say Christmas but dropped the T and said CHRISSmas. Then, other people copied them and now it's the right was to say it.

2. Another possible reason could be that you don't always say things as they're spelt
e.g. You don't say "Said" you say "sed"
