Quite an odd question... Kirby is just pink like any other video game character. It's like, why does Mario wear red? Hes just drawn that way from the original drawing/idea.

When Kirby was about to make his wish, Marx pushed Kirby out of the way, then he wished he controled popstar, the planet Marx lived on! Marx gets wings, and Kirby first had to deactivate "Nova" and then defeat marx... in the end Kirby wins(duh) and marx gets shot into "Nova" and the star exploded, Marx dies, and popstar is safe.... until Marx returns in Kirby Superstar Ultra.
