All saints were noble in one way or the other. However, I think you are referring to Mother Teresa the Nobel Saint. She was awarded the Nobel Peace Prize in 1979 for her work among the poor and dying of India and many other places in the world.By the way, Mother Teresa is not yet a saint but we expect she will be canonized in the next few years. Right now she is called Blessed Teresa.
It is traditional for religious to take a new name when they join a religious order. In the Sisters of Loreto, when a woman makes her final vows, she take the title of Mother. Mother Teresa took the name Teresa in honor of St. Therese of Lisieux, a patron saint of missionaries.
