it helps them camouflage into the water. if you look at them from above, they're hard to see b/c the black blends in with the dark water. if a predator looks at them from below, it is hard for them to be seen b/c the white blends in with the sunlight above them.
An orca is black and white because it makes it camouflage. The top of their bodies is black because when prey like penguins or seals look down at the water it is dark so the dolphins black patches on its upside help it blend in with the dark water. The dolphin is then white on its underside because for any prey looking upwards like fish or dolphins for example the orca would blend in with the water as looking upwards there is more light. This sort of colour pattern is also seen in Great White Sharks they to are dark on the top of their body and dark on their underside. :)
