It has three purposes: 1 it keeps the liquid from freezing by adding chemicals which by the nature of their atomic structure freeze at lower temperatures, 2 it adds lubricant to the internal moving parts of the cooling system and 3 it prevents rusting, pitting and corrosion of the cooling system. Much like a pressure cooker temperature is also controlled by pressure which means that you must always check for leaks in the system. Another point is that the correct volumn of liquid within the pressurized system (the radiator, hoses, ports and water pump, and the overflow) must be maintained in order to ensure the pressure in not too much or too little and therefore does damage by forcing the liquid through gaskets and hose clamps.

2001 Toyota Camry your daughter has been driving the car for 2 days without antifreeze what damage can occur?

If no liquid in the cooling system, then the heads are probably warped and the engine is ruined. If running straight water and no antifreeze, then permanent damage unlikely unless the temps have been cold enough to freeze the water in the engine (popping the freeze plugs), or the engine has gotten hot enough to boil off the water in the cooling system. 50/50 mix of distilled water and antifreeze is necessary to prevent freezing, boil-over, and cooling system corrosion.
