Brock showed his face in the first season after getting his buttkicked by Ash's Pikachu. He and Ash became friends thus leading him to always being around. The only reason why you don't see Misty is because she had to take up her duty as the next heir to her family's gym.

Geodude and Onyx
Brock, in Pokemon Red and Green/Blue, has Onix (level 14) and Geodude (level 12) as his main Pokemon.
You can catch a grass type Pokemon but catching mankey is the easiest because it appears a lot especially to the east of Pewter (where Brock is). Mankey has the advantage of being a fighting Pokemon which is super-effective against Brock's Pokemon.
