Chili peppers are spicy due to a spice within the chili known as capsicum. Chilies that contain the botanical capsicum are high in vitamins C and A as well as carotenoids which is what provides the flavor. There are both mild and spicy chili peppers below are a few that are considered spicy/hot: * Scotch bonnet (popular in the West Indies) and has been called the hottest of all chilies * Annaheim (slightly hot) has a lot of flavor and richness * Cayanne

it contain capsycide which burns mammal taste buds, btw-birds cant feel it. its the plants protection.

it contains capsaicin it does not "burn" anything but it does stimulate pain receptors found in the mucus membranes of the mouth etc. (remember the burn you felt the next day after you had a particularly spicy dish) These receptors are called chemoreceptors and like the receptors for smells and taste (taste buds sense sweet salty, bitter, sour and some people think umami) are sensitive to chemicals in the environment Plants have capsaicin to limit the kinds of animals that eat the fruit (peppers), or perhaps to cause them to spit the seeds out a distance away from the plant thus dispersing the plant over further distances. Similar compounds are ginger (gingerol) black pepper (piperine) and surprisingly vanilla (vanilin) all have similar chemical structures. Isn't evolution a wonderful thing!
