This is a matter of opinion and many people would strongly disagree with you that essay-writing is difficult. As compared to essay-writing at lower levels of schooling, such as high school or middle school, there are additional components to university essay-writing that are time consuming.

1) Sources: In many high school papers and most middle school papers, a student is not required to give the sources for the facts and allegations that they make throughout the paper. This is especially true for "thought papers" and "reaction papers" where your opinion is more desirable than the facts. In universities, the writer is expected to reference and consider previous writings created by those much more knowledgeable than they are in the respective discipline.

2) Length: Papers get longer as the writer is expected to more fully develop his ideas, expand his syntax, and improve his diction.

3) Timing: A student typically has less time to put together a paper for a University class than he does for high school or middle school.

4) Prompts: The Prompt or Question which the student has to address in the essay at the university-level is typically more layered, nuanced, and requires a deeper level of analysis merely by construction. "Explain the effects of Arab Nationalism" is a much broader prompt and is much easier to write about (in a broad way) than is "Describe how Arab Nationalism marginalized the Coptic population in Cairo" which requires much more in-depth analysis and is less prone to overbroad generalizations.

5) Perfunctory: An essay in the university setting is considered commonplace and is a normal occurrence whereas in most lower levels of education, time is carved out for an essay project.
