Hydrogen gas consists of diatomic molecules held together by weak intermolecular forces (van der waals forces). These molecules are weakly held together and thus easily escape into the gas phase. On the other hand, the carbon atoms in diamond are bonded covalently in a strong 3 dimensional network. These atoms are more strongly held together, and thus they are not easily made gaseous.
