Depends on what you're really asking, if you're asking why Ichigo is (age) 15 at the start of the series it's because Kubo wrote it that way. If your asking why Ichigo is abbreviated by '15' in the fan community it's because his name can be broken up as 'Ichi' (The number 1 in Japanese) and 'Go' (the number 5 in Japanese) thus 'Ichi-go' literally can be read '1-5' or as 15.

Ichigo is japanse and simply means "strawberry". And if used for a name, this is what it usally means. However, in the japanese language "ichi" means 1 and "go" means 5. So in other words pratically 15.
