Fossil fuel was laid down under the ground millions of years ago, so it has been non-renewable for a long time. This won't change.
We have to move to renewable energy for all our power. The key problem we face is to keep reducing the consumption of non renewable resources as global population increases. Non renewable resources include fossil fuels and rare raw materials. While there are a wide range of technologies, ideas and processes that can address many of these problems the biggest issue we face is resistance to change. While governments are controlled and influenced by major organisations we cannot positively impact the human race's impact on our planet. Developed economies rely on increasing consumption of resources, both renewable and non renewable. So we need to influence our governments and organisations.
Renewable energy sources are Carbon neutral, that is, they do not destroy the environment by increasing the Carbon-dioxide content in the atmosphere. They help control the effects of Global Warming and Climate Change. Renewable energy sources also provide energy security. With the scarcity and rising prices of petroleum, alternate sources of energy have to be looked at to avoid economic slowdown. Renewable energy provides new avenues of employment opportunities and helps to diversify the energy industry. Renewable energy permits localised generation or decentralised generation eliminating transmission and distribution losses. This also enables consumers to export/sell surplus energy generated to the grid and this acts as an additional income to the consumer.
If we are set on species suicide we should consume all of out natural non-renewable resources as quickly as possible. This will ensure we have no energy, maximize climate change to create drought and famine and generally bring an end to our civilization.

The reason why countries use non-renewable energy sources such as oil, coal and natural gas is simply because the infrastructure to use these is already there and it is cheaper. We are now starting to build the infrastructure needed to use renewable energy sources such as solar and wind power but it is expensive to do so and the cost to build the necessary equipment would make the price of the power very high. So, when it comes right down to it- the answer to your question is: Because it is cheaper!
If there is a large population resources, especially non-renewable ones, will decrease in quantity as there are more people needing them. However, a place with a small population will have more natural resources provided the people don't waste them.
