Molarity is the number of moles of solute in per liter of solution.

It is used to to tell you the quantity of a chemical that is dissolved in a solution.

Conversely, if you dissolve some chemical in a solution, then you can determine the molarity and know something about how many molecules you are adding if you know the molar mass of the chemical.

When designing or understanding a chemical reaction, it is much better to quantify the process in terms of the number of molecules involved in the reaction. Molarity is how you do that. Otherwise, describing chemical reactions and just measuring in grams of reagents gives no information of how much, in terms of number of molecules, are involved. That is why so much emphasis in chemistry is given to reaction balancing and molecular weight.
