When a sheep has been annually sheared, the woollen coat taken off is the fleece. The sheep will have time to regrow a coat thick enough to give protection from the winter weather. If left unsheared, the fleece will naturally be shredded, usually by the sheep rubbing against tree trunks, fence posts, etc.

Kill spiders for string, and make a 2x2 square in the crafting. or, spawn one using NEI or TMI or SPC. There are many other mods that allow you to spawn in items. Sheep can be sheared without harming them, create shears by placing an iron ingot in the lower left and upper right of your crafting slot. The shears will shear the sheep, dropping the wool blocks without killing it.

Yes, of course it will die. The cause of death will probably not be from its long shaggy coat, though. If a domestic sheep is left un-shorn, the wool becomes matted with its droppings and burrs. Both can irritate the skin and lead to infected or infested lesions under the matted wool. The animal could die from that. Wild sheep, not having been bred to produce wool, are less likely to suffer from the matted wool problem--but they will still die...usually from being eaten by a predator. The sheep may not die. Many sheep that have missed the muster for shearing have survived for years. The fleece will get very heavy and may be more prone to fly strike.
