As you dig down, you are distancing yourself from the organic layer. Since carbon is the main component of oranic matter, and carbon is black. soil often becomes less black as you dig deeper. Additionally, different layes of historical deposition may be reached. Ex: once there was a flood and it washed a lot of red clay onto the ground- there will be a red layer there. Then, many leaves fell and rotted- there will be a black layer there. Etc..
