Starch is a good storage of carbohydrates because: 1. It can fold up to take up less space inside the plant. 2. It is insoluable in water, meaning, it can stay inside the plant without dissolving. 3. It can be digested as "back up" energy in case there is less limiting factors like; Carbon Dioxide, light, temperature or nutrients in the soil.
