Because it is a spiritual book. Many things have a spiritual meaning not a literal meaning.

The Bible also contains allegory, parables, metaphors etc. Interpretation of stories verses should be compared with other scripture.

This is the first rule of interpretation - compare scripture with scripture.

It is wrong to build a doctrine/teaching on one verse you should have several verse to support the doctrine/teaching.

The Bible is different from "other books" [like school books, novels, magazines, manuals, etc] because most people "accept... BELIEVE... what other books say and take them at face value"... and don't try to interpret them.

The Bible is not so readily accepted [believed] in the hearts and minds of people... mostly because the Bible tells "the Truth" [John 17:17] that most selfish, egotistical, vain, pride-filled people don't want to hear; that "MANKIND IS WRONG" in his thinking and actions [because of his "sinful;" "law-breaking" - I John 3:4 rebellious nature]. And no one likes to be told that they're wrong.

Therefore... "men like to interpret the Bible" in attempts to make God more palatable and acceptible to their rebellious nature. Even though "the Bible interprets itself"... and doesn't leave it up to men:

"This is the dream; and WE [God and Holy Spirit-inspired Daniel] WILL TELL THE INTERPRETATION thereof before the king." (Dan.2:36)

"...the Great God hath made known to the king what shall come to pass hereafter: and the dream is certain, and THE INTERPRETATION thereof sure." (verse 45)

"So we have the message of the prophets more certainly guaranteed. Please pay attention to this message as to a lamp that is shining in a dismal place, until the day dawns and the morning star rises in your hearts; because you recognize this Truth above all else, that no prophecy in Scripture IS TO BE INTERPRETED BY ONE'S OWN MIND, for no prophecy has ever yet originated in man's will, but men who were led by the Holy Spirit spoke from God." (II Peter 1:19-21 WNTWilliam's New Testament)

King Nebuchadnezzar, accepted Daniel's inspired interpretation:

"The king said to Daniel, 'Truly, your God is the God of gods, the LORD over kings, a revealer of mysteries, for YOU HAVE BEEN ABLE TO REVEAL THIS SECRET.'" (Dan.2:47 NLTNew Living Translation)

Yet, the Bible is different from all other books and most men find it necessary to "interpret" it to suit themselves, because they don't accept God's interpretation of His own Divinely-revealed Word.
