The table is supposed to be like the table on The Last Supper where they turn the bread and wine into body and blood. When the Body of Christ is on the table it is special enough to hold Christ's body

The basic meaning of "holy" is "set apart", especially set apart for a sacred use. I think that you can see why the term applies to the communion table as it is set apart for the use in the sacrament of Communion.
