College English is an English class with higher levels of reading, writing and oral communication. The reason it's much more difficult than high school English, is that the teachers there tend to grade very hard on your writing in preparation for university(which is not really a good thing)
The difficulty in obtaining a bachelor's degree is only partly to do with the subject of the degree. For example, if can depend on the skills of the person trying to get the degree, the college they choose, and the subjects taught at that college. In some colleges an English degree is very easy; in others, it's very difficult. And the person getting the degree might have a very easy time with math but a very difficult time with English, so which subject that person likes best would also impact which degree would be easiest to obtain.
