Because most of the mideast is populated by Muslims, who are led by radicals who are determined to eliminate Israel, which is populated by Jews. Israel, on the other hand, is protected by the military and economic power of the United States. The Muslim countries, which are militarily inept, do not have the power to conquer Israel, and so they resort to terrorism to accomplish their goals. Because terrorism is sporadic and unpredictable, and aimed at civilians more often than at military targets, the region is unstable.

Additionally, for the last two years, the radical Muslim Brotherhood organization has been successful in overthrowing several stable governments, including Tunisia, Libya, Egypt, and Morocco, during the so-called "Arab Spring". They have replaced these stable governments with unstable and radical pseudo-governments which have themselves been beset by rebellions.
